Wild Rice Stuffing

Ingredients

  • 1 6oz package long grain wild rice
  • 1 teaspoon lemon peel, grated
  • 1 tablespoon lemon juice
  • 2 tablespoons butter or margarine
  • 1 tablespoon onion, chopped
  • 1/4 cup celery, coarsely chopped
  • 1 3oz can mushrooms, drained
  • 1 egg, beaten
  • 1 tablespoon parsley, chopped
  • 2 tablespoons pimento, drained

Directions

  1. Cook rice mix as package label directs. Undercook rice rice rather than overcook rice; water should be almost completely absorbed. Add lemon peel and lemon juice.

  2. In a medium skillet, add butter and saute onion, celery, and mushrooms for about 5 minutes. Remove from heat.

  3. Add rice mixture, egg, parsley, and pimento; toss lightly with fork to mix well.

  4. Makes 3-1/2 cups.
