Smoked Salmon Primavera

Ingredients

  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese
  • 1 lb pasta
  • 3 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 red pepper, julienned
  • 3/4 lb - 1 lb smoked salmon
  • chopped parsley

Directions

  1. In a pan add olive oil, garlic, and red peppers. Cook 1 to 2 minutes. Add in heavy cream and bring to a boil. Reduce heat and simmer.

  2. In a separate saucepan prepare the pasta.

  3. Add drained, cooked pasta to saucepan with heavy cream. Gently add in salmon and and top with parsley. Serve warm.
