Pasta Salad with Spring Greens

This can be a great main dish as well as a side dish

Serves 4 people

Ingredients

  • 5 ounces of bow tie or campanelle pasta
  • 6 cups of spring greens
  • 1 cup grape tomatoes
  • 1/2 cup feta cheese or blue cheese (2 oz)
  • 3 Tablespoons olive oil
  • 3 Tablespoons white wine vinegar/balsamic vinegar
  • Salt and pepper to taste
  • 1/4 cup pine nuts

Directions

  1. Cook pasta according to package directions. Drain, rinse with cold water, and drain again.

  2. In a large salad bowl, combine cooked pasta, spring greens, tomatoes, and cheese. Drizzle with olive oil and vinegar, tossing to coat. Season to taste with salt and pepper. You can use your favorite salad dressing instead of olive oil and vinegar.
