Mediterranean Bulger Salad

Ingredients

  • 4 cups spring OR filtered water
  • 2 cups bulger
  • Pinch sea salt
  • 1 cup finely minced fresh flat-leaf parsley
  • 1/4 cup finely minced fresh mint
  • 2 ripe tomatoes, diced
  • 2-3 scallions, minced
  • 1 medium cucumber, diced
  • Juice of 2 lemons
  • 1/4 cup extra-virgin olive oil
  • 1/2 cup minced black olives (optional)

Directions

  1. Bring the water to a boil. Stir in the bulger and salt, cover and turn off the heat. Allow to stand for 15 minutes, undisturbed. Fluff with a fork and transfer to a mixing bowl. Mix in the remaining ingredients, seasoning to taste with salt. Chill before serving.
