Fish, Tomato and Spinach Casserole

Ingredients

  • 1 package (284 grams) fresh spinach, washed with coarse stems removed
  • 1 can tomato sauce
  • 400-700 grams cod or sole
  • 2 cups grated mozzarella or white cheddar

Directions

  1. Preheat oven to 350 F.

  2. In a saucepan over medium-high heat, cook wet spinach leaves for 5-8 minutes, until just limp.

  3. Drain, squeeze out remaining moisture and chop coarsely.

  4. Pour half the sauce into a casserole dish, add a layer of half of the fish, half the spinach, half the cheese, then repeat.

  5. Bake for 45 minutes or until bubbling.
