Ingredients

  • Potatoes – 6 medium (cubed)
  • Onions – 2 large(chopped)
  • Garlic – 2 -3 flakes(chopped)
  • Ginger – a very small piece (chopped)
  • Green chillies – 1-2 (slit)
  • Cumin (Jeera) seeds (optional) – 1/2 tsp
  • Green peas – 1/2 cup
  • Carrot – 1 (chopped)
  • Turmeric powder – 1tsp
  • Salt to taste
  • Oil

Directions

  1. Heat oil in pan and add cumin seeds till it splutters and then add the garlic. ginger, onions and green chillies and sauté till the onions turn slightly pink. To this add the green peas and carrots and cook till they become tender.

  2. Now add turmeric powder and potatoes and bring to boil. Reduce the flame and let the potatoes cook. In between with a spatula break the potatoes into smaller pieces so as to give the gravy its consistency . Add the required salt and remove from fire. Garnish with coriander leaves.

  3. Aloo sabzi is ready to be served with hot puris, chappatis or rotis.
