Greek Pasta salad

Ingredients

  • 16 oz bowtie pasta
  • 1/2 c. EVOO
  • 3 T red wine vinegar
  • 3-4 minced garlic cloves
  • S&P
  • 1/2 cup drained and chopped sun dried tomatoes
  • 1/2 c. pitted sliced Kalamata Olives
  • 1/4 c. chopped red onion
  • 3 cups baby spinach (torn in half)
  • 12 oz crumbled Feta
  • 3/4 t. greek seasoning

Directions

  1. Cook pasta al dente and drain

  2. Combine EVOO, vinegar, garlic, pepper and greek seasoning in jar with lid, seal tightly – shake to mix and pour over cooled pasta.

  3. Toss pasta, tomatoes, olives, onion and oil mix in a salad bowl and chill.

  4. Add spinach and cheese to pasta 15 min before serving.
