Peach & Oat Cookies

Relatively low fat cookie

Prep time: 15 minutes
Cook time: 10 minutes

Categories: Biscuits

Ingredients

  • 60g butter or low fat spread
  • 3/4 C brown sugar
  • 1 t vanilla essence
  • 1 egg, beaten
  • 1C rolled oats
  • 3/4 C self raising flour
  • 3/4 C dried peaches/apricots, chopped

Directions

  1. Cream butter and sugar.

  2. Add egg and vanilla essence.

  3. Fold in remaining ingredients.

  4. Place tablespoon lots on tray, 6 cm apart.

  5. Bake at 190oC approx 10 minutes.

  6. Cool on tray until firm.
