Thai salmon fish cakes

Ingredients

  • 300g salmon fillets
  • 2t Thai red curry paste
  • 3T chopped fresh coriander
  • 1 can white beans
  • 2 eggs

Directions

  1. simmer beans in water until soft (around 8 min)

  2. put raw salmon, egg, curry paste and coriander in a food processor

  3. add drained, cooled beans (so as not to cook the egg!)

  4. pulse to form a rough mixture

  5. form 4 – 6 patties – if not sticking add a dash of olive oil and reblend the mixture

  6. heat oil in pan, and fry 5 min per side
