Cranberry Muffins

Ingredients

  • 1 egg
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 1 3/4 cups flour
  • 1/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 2 tsp baking powder
  • 1 1/2 tsp grated lemon peel
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup cranberries

Directions

  1. Preheat oven to 400.

  2. Grease bottoms only of 12 muffin cups or line with paper cups.

  3. Beat egg in large bowl with fork.

  4. Stir in milk and butter.

  5. Stir in remaining ingredients, except berries, until flour is just moistened. Fold in berries. Divide evenly among muffin cups.

  6. Bake 20-25 minutes or until golden brown. Let stand 5 minutes before removing from pan.
