Scones (Greek Yogurt)

Ingredients

  • 1 egg, beaten
  • 1/3 cup. sugar
  • 1/4t. sea salt
  • 1Cup lemon yogurt
  • 1/4 cup. butter, melted
  • zest of 1 lemon (use juice and 1t. zest for glaze)
  • 2Cup flour
  • 2t. baking powder
  • 1/2t. baking soda
  • 1Cup fresh blueberries
  • GLAZE:
  • 1Cup powdered sugar
  • juice from 1 lemon
  • zest

Directions

  1. Pre Heat oven to 400*

  2. Combine egg,sugar,salt,butter and lemon zest, mix well. Add flour, baking powder and soda, mix until just moistened. Fold in blueberries.
  3. On a clean dry cutting board, form
  4. dough into a 12″×3″ rectangle. Slice
  5. rectangle in 1/2 and each half in 1/2 again. Leaving you with 4- 3" squares. Cut each square on diagonal
  6. giving you 8 triangular scones. Carefully move scones to baking sheet leaving room to spread. Bake 15-16 minutes or until lightly browned.
  7. Mix glaze and lightly coat scones after they have cooled.
