GingerBread Cheese Cake

Ingredients

  • 3-8 ounce packages cream cheese
  • 4 eggs, lightly beaten
  • 1c. finely crushed gingersnaps
  • 3/4c. finely crushed graham crackers
  • 2 TBSP. granulated sugar
  • 1 TBSP. all-purpose flour
  • 1/3c. butter, melted
  • 3/4c. packed brown sugar
  • 2 TBSP. all-purpose flour
  • 2 TBSP. molasses
  • 1/2 tsp. each ground ginger and ground cinnamon
  • Dash each ground nutmeg (fresh) and ground cloves
  • 2 TBSP milk
  • 1 recipe Gingerbread Cutouts or coarsely chopped crystallized ginger (optional)
  • 1 recipe Tangerine Whipped Cream

Directions

  1. Allow cream cheese and eggs to stand at room temperature for 30 minutes. Meanwhile, preheat oven to 325* degrees .For crust, in a medium bowl combine crushed gingersnaps, crushed graham crackers, granulated sugar, and 1 tablespoon flour. Stir in melted butter until combined. Press mixture onto the bottom and 1 1/2 inches up the sides of a 9-inch spring-form pan.

  2. In a large mixing bowl beat cream cheese, brown sugar, 2 tablespoons flour, molasses, ground ginger, cinnamon, allspice, and cloves with an electric mixer on medium speed until combined. Beat in milk until smooth. Stir in eggs. Pour cream cheese mixture into crust-lined pan, spreading evenly.
  3. Bake for 25 to 50 minutes (check every 5 minutes after 25 min.) center should appear set when gently shaken. Cool in spring-form pan on a wire rack for 15 minutes. Using a small sharp knife, loosen crust from sides of pan. Cool for 30 minutes more. Remove sides of pan; cool cheesecake completely on wire rack. Cover and chill for at least 4 hours.
  4. If desired, garnish cheesecake with Gingerbread Cutouts. Serve with Tangerine Whipped Cream.

  6. Tangerine Whipped Cream

  7. Yield: 1 cup

  8. 1/2 c. whipping cream

  9. 1 TBSP. sugar
  10. 1/2 tsp. finely shredded tangerine peel or orange peel
  11. Directions

  12. In a chilled small mixing bowl beat whipping cream, sugar, and tangerine peel with the chilled beaters of an electric mixer on medium speed until soft peaks form (tips curl).
