Black Bean Quinoa Salad

This salad is fast, yummy, and nutritious. Don’t leave out the jalapeno, it gives “a little something”!

Serves 4 people

Ingredients

  • 1 mango, peeled and diced small
  • 1 red bell pepper, seeded and diced small
  • 1 cup thinly sliced scallions
  • 1 cup chopped cilantro
  • 1 Tbsp vegetable oil
  • 2 Tbsp wine vinegar or balsamic vinegar
  • 1/4 tsp salt
  • 1/2 tsp freshly ground pepper
  • 1 tsp italian salad dressing seasoning mixed with 2 tsp water
  • 2 cups raw quinoa, cooled (about 3/4 c raw)
  • 1 15-oz can black beans, rinsed and drained
  • 1-2 finely diced jelapeno peppers, optional

Directions

  1. Mix everything together and serve over greens
