Royal Shortbread

Nice shortbread recipe.
Perfect gift idea for special person.
Keeps well.

Prep time: 30 minutes
Cook time: 20 minutes
Serves 30 people

Ingredients

  • 225 g butter, softened
  • 110 g icing sugar, sifted
  • 275 g plain flour
  • 60 g cornflour
  • caster sugar to sprinkle

Directions

  1. Cream butter, blend in icing sugar and whisk until light in colour.

  2. Slowly mix in flour & cornflour, sifted together.

  3. Knead gently.

  4. Roll dough out to 6mm thickness, cut into bars and mark with tines of a fork.

  5. Chill on paper lined trays 15 mins.

  6. Sprinkle with caster sugar and bake at 150oC (not fan setting) 15-20 mins.

  7. Cool 5 minutes on tray before transferring to cooling rack.
