Mom’s Meatloaf (Phyllis Tatum)

Ingredients

  • 1.5 lbs Ground Chuck
  • Diced Red and Green peppers, about 1/2 cup each, or to taste
  • Diced onion, about 1/2 cup
  • 3 Tbs butter
  • 2 eggs, beaten
  • Dash of salt
  • 1 cup bread crumbs or cracker crumbs
  • Worchestershire sauce (about 3 Tbs)
  • Splash of milk (about 1 Tbs)

Directions

  1. Sauté peppers and onion in butter. In large bowl, mix ground chuck with ingredients while sautéing pepper mix. Add pepper mix and mix well. Form into loaf in a loaf or 8 × 8 pan. Spread topping (below) on meatloaf before cooking and several times during baking.

  2. Bake at 375* for 75 minutes. Let stand about 5 minutes before cutting and serving.

  4. 1 C. ketchup

  5. 1/3 C Light Brown Sugar

  6. ¼ C. Worchestershire Sauce
