Chicken, Snow Peas, and Pineapple on Garlic Noodles

Serves 4 people

Ingredients

  • 2 Cups Meat from a Rotisserie Chicken, I used one breast quarter and one leg/thigh quarter,), deboned and diced
  • 1 Medium Onion, Cut into strips
  • 1 Medium Red Pepper, Diced
  • 2 TBS Sesame Oil
  • 3 Cloves Garlic, chopped, minced
  • 1/4 tsp Red Pepper Flakes (more if you like, I wanted just a hint of heat around the sweet of the pineapple)
  • 2 TBS White Balsamic Vinegar ("normal" balsamic is fine, but will darken the pineapple and chicken)
  • 2 TBS Soy Sauce
  • 2 Tbs Oyster Sauce
  • 2 Cups Diced Fresh Pineapple
  • 1 Cup Snow Peas, ends snipped off
  • 2 stalks Scallions (green Onions) sliced
  • 1 tsp Sesame Seeds

Directions

  1. In a wok or large skillet, heat the sesame oil to just before smoking

  2. Add the onion and saute for 5 minutes or until the onions soften and become translucent.

  3. Add the pepper and garlic and saute for 2 more minutes.

  4. Add the Red Pepper Flakes and mix.

  5. Add the Soy Sauce, Oyster Sauce and Vinegar and mix.

  6. Add the Snow Peas, Chicken and Pineapple and stir fry for 5 minutes, untl all of the liquid has been absorbed

  7. Garnish with green onion slices and sesame seeds

  8. Serve HOT and Enjoy!
