Paleo Kale Soup

6 servings (approx. 1 3/4c.) 2 210 calories.

I like to portion this into servings and freeze.

Ingredients

  • 1 T. olive oil
  • 2-3 lg. leeks, chopped, white and light green parts only (350g)
  • 1 c. onion, choppped (160g)
  • 12 oz. extra lean ground beef (4 oz.=130 cal)
  • kale, chopped (160g)
  • 1 32 oz. can petite diced tomatoes
  • 6c. chicken broth
  • salt and pepper

Directions

  1. In a large stockpot, heat oil over med. high heat.

  2. Add leeks and onions, saute until soft.

  3. Add garlic, saute 1-3 more minutes.

  4. Add meat, stirring until brown.

  5. Add kale, tomatoes, broth, salt, and pepper.

  6. Simmer on low 30 minutes.
