Raw Cookies

Ingredients

  • 1/2 cup raisins
  • 1/4 cup natural style peanut butter (used chunky Adam’s)
  • 2 Tbsp dry roasted peanuts (unsalted)
  • 1/8 tsp pure vanilla extract

Directions

  1. Add everything to a food processor or mini food chopper, process until relatively smooth and in a ball.

  2. Lay out a sheet of parchment paper and make 8 1 Tablespoon balls ( I used a 1 Tablespoon Disher). Roll the balls gently with your hands, flatten with a fork, making criss-cross patterns on the top. Let sit for 30 minutes to an hour and the cookies dry out a bit (less oily) and then enjoy!

  3. Makes 8 cookies.
