Quaker-Style Chewy Granola Bars

I use the no bake method and it is super chewy. I tried baking, and they were still tasty, suggested replacing the sweetener with the sunbutter to make less sweet and add protein. Will have to try soon.

You can experiment with the additions. Maybe a different kind of cereal or pumpkin seeds. I am also thinking about trying maple syrup instead of honey.

Ingredients

  • 2 c rolled oats
  • 1/2 c flour, I used wheat, but original calls for oat
  • 1/2 tsp baking soda
  • 1/2 tsp salt (optional)
  • 1/4 cup molasses
  • 1/4 cup honey
  • 1 tsp vanilla
  • 2 T coconut oil
  • 2 T canola oil
  • 2 T brown sugar (optional)
  • 2 T sunbutter, sweet potato puree, or applesauce
  • 2 cups rice crispies
  • 1/4 cup chocolate chips, enjoy life mini chips
  • 1/4 cup craisins
  • 1 Tbs chia seeds (was trying to boost protein, but definitely optional)

Directions

  1. Combine oats, flour, baking soda, and salt in bowl

  2. In 1 cup measuring cup fill to 1/2 cup with honey and molasses (I use a little more honey than molasses).

  3. Add vanilla, oils, sugar, and sunbutter.

  4. owave wet ingredients for about 1.5 minutes, until coconut oil melts.

  5. Pour wet ingredients into dry mix and stir.

  6. Add rice crispies and mix again.

  7. Add the rest of your add-ins, but beware that your chips may melt if the wet ingredients are too hot.

  8. Pour mixture into 9×13 pan lined with parchment paper.

  9. Using another sheet of parchment paper squish very very hard.

  10. Fridge until firm, then cut and enjoy.
