Belongs to acrazyraisin Lentil Loaf

The original recipe was for mini loaves, and it works as a big loaf as well, but I find I like the sauce to loaf ration better when I cook it in a baking pan. I always double the recipe and bake it in a 9×13 pan because the leftovers are tasty as well.

I made this with lemon-lime curd filling (http://www.recipething.com/recipes/show/61718-lemon-lime-curd) but I am sure jelly would be good as well.

You might need to buy:
  • rolled oats

  • cinnamon
  • nutmeg
  • molasses
  • honey
  • vanilla
  • coconut oil
  • canola oil
  • rice krispies

I use the no bake method and it is super chewy. I tried baking, and they were still tasty, suggested replacing the sweetener with the sunbutter to make less sweet and add protein. Will have to try soon.

You can experiment with the additions. Maybe a different kind of cereal or pumpkin seeds. I am also thinking about trying maple syrup instead of honey.
