Fajita Casserole

Ingredients

  • 8 flour tortillas, cut into thick strips
  • Cooking spray
  • 1 package fajita seasoning mix
  • 1 1/2 pounds cooked boneless, skinless chicken breasts, sirloin steak or large shrimp, peeled and deveined
  • 1 (15 oz) can tomato sauce
  • 1 (16 oz) can refried beans
  • 1 red bell pepper, seeded and thinly sliced
  • 1 green bell pepper, seeded and thinly sliced
  • 2 onions, thinly sliced
  • 1/4 cup chopped cilantro or flat-leaf parsley
  • 2 cup shredded Mexican Blend cheese
  • Sour cream, to garnish
  • Salsa, to garnish
  • Guacamole, to garnish

Directions

  1. Heat oven to 375°F.

  2. Spray 13×9-inch baking dish with cooking spray.

  3. In medium bowl, mix refried beans, tomato sauce and fajita seasoning mix. Stir in meat.

  4. Arrange ½ of tortillas strips over bottom of baking dish, overlapping if necessary, in baking dish.

  5. Top with half of bean mixture, half of the vegetables and 1 cup of the cheese.

  6. Repeat layers with remaining tortillas, bean mixture, vegetables and cheese.

  7. Cover baking dish with foil.

  8. Bake 30 minutes.

  9. Uncover; bake 15 to 20 minutes longer or until hot and bubbly.

  10. Let stand 5 minutes before cutting.

  11. Garnish with sour cream, salsa and guacamole.
