Chipotle-Honey-Glazed Pork Tenderloin

Flavorful pork tenderloin recipe with a sweet-and-spicy glaze. Complete the meal with sweet potatoes and green beans.

Ingredients

  • 3 tablespoon(s) extra-virgin olive oil
  • 1 1/4 pound(s) pork tenderloin
  • 3 tablespoon(s) honey
  • 1 tablespoon(s) chopped chipotle chiles in adobo
  • 1 clove(s) garlic, crushed with press
  • 1 1/2 pound(s) green beans, trimmed
  • 4 large (1 1/2 pounds) sweet potatoes
  • 1/4 cup(s) nonfat plain Greek yogurt
  • 1 tablespoon(s) orange juice

Directions

  1. Preheat oven to 450 degrees F. In 12-inch skillet on medium-high, heat 2 tablespoons olive oil. Sprinkle pork all over with 1/2 teaspoon salt. Add pork to skillet; cook 6 minutes or until browned on all sides, turning occasionally.
  2. Transfer pork to 13- by 9-inch baking dish. In small bowl, mix 1 1/2 teaspoons olive oil, honey, chipotles, and garlic; brush pork with half of glaze and roast 5 minutes.
  3. While pork roasts, toss green beans with remaining 1 1/2 teaspoons olive oil. Remove baking dish from oven; push pork (and any browned bits) to one side and brush with remaining glaze. Add green beans to other side of dish and roast 15 minutes longer.
  4. Meanwhile, with fork, pierce sweet potatoes. Transfer to paper-towel–lined microwave-safe plate and microwave on high 10 min. Holding potatoes with dishtowel, scrape flesh into medium bowl. Add yogurt and orange juice; mash until almost smooth.
  5. Slice pork; serve with pan drippings, beans, and potatoes.
