Inside-Out Cheeseburgers

Ingredients

  • 1 1/4 lbs lean ground turkey
  • 1/2 cup flaxmeal
  • 1/2 small red bell pepper, finely diced
  • 2 green onions, thinly sliced
  • 6 tbsp goat cheese
  • 3/4 tsp salt
  • 4 tsp extra-virgin olive oil

Directions

  1. In a large bowl, combine the trukey, flaxmeal, bell pepper, green onions, 2 tbsp of goat cheese and 1/2 tsp of salt.

  2. Blend well and form into 4 balls.

  3. Poke a hole into the middle of each ball and stuff with 1 tbsp of the remaining goat cheese.

  4. Pinch the turkey mixture to seal in the cheese and form into 4 patties.

  5. Make the as flat as possible, while not squeezing the cheese out.

  6. In a large, non-stick skillet, heat the oil over medium-high heat.

  7. Sprinkle the pan with the remaining 1/4 tsp salt.

  8. Reduce the heat to medium, add patties, and cook for 3 minutes.

  9. Turn the patties and cook for 2 minutes longer.

  10. Add 1/4 cup of water to the pan, reduce the heat to a high simmer and cover.

  11. Cook for 8-10 minutes.
