Southwestern Skillet Turkey

Ingredients

  • 4 tsp extra-virgin olive oil
  • 1 pound turkey breast cutlets, cut into strips
  • 1 tsp ground cumin
  • 1/4 tsp cayenne
  • 1 small jicama, peeled and julienned
  • 1 sweet onion, finely chopped
  • 2 cups cherry tomatoes, halved
  • 1/3 cup fresh cilantro, chopped

Directions

  1. In a large, nonstick skillet, heat the oil over medium-high heat.

  2. Add the trukey and sprinkle with cumin and cayenne; cook, stirring, for 30 seconds.

  3. Stir in the jicama and onion; cover and cook for 3 minutes.

  4. Stir in the cherry tomatoes, cover, and cook for 2 minutes longer.

  5. Uncover, stir, and cook for another 2 minutes.

  6. Stir in the cilantro.
