Lemon Bars

Ingredients

  • 1 1/2 c flour
  • 2/3 c powdered sugar
  • 3/4 c cold butter
  • 2 - 3 Tbsp fresh lemon zest or 2 tsp minced dried lemon peel
  • 3 eggs
  • 1 1/2 c sugar
  • 4 Tbsp flour
  • 1/4-1/3 c lemon juice (juice of 2 large lemons)
  • 1 tsp powdered lemon peel
  • 1 - 1 1/2 tsp lemon extract
  • 1/4 - 1/3 c powdered sugar

Directions

  1. Preheat oven to 325F

  2. In a large bowl, combine the flour, powdered sugar and lemon zest. Cut in the butter and mix with a pastry blender or 2 forks until crumbly.

  3. Press into a lightly greased 9 × 13in pan. Bake for 20 minutes at 325F.

  4. While the crust bakes, in a mixing bowl, beat the eggs.

  5. Add sugar and flour. Add the lemon juice, powdered lemon peel and lemon extract, mix well.

  6. Remove the crust from the oven and pour on the topping. Increase the heat to 350F. Return the pan to the oven for 15 more minutes.

  7. When completely cooled, cut and sprinkle with powdered sugar for serving.
