Chocolate Chip Zucchini Cake

Ingredients

  • 1/2 c butter (1 stick) softened
  • 1 3/4 c sugar
  • 1/2 c vegetable oil (consider subbing applesauce)
  • 2 eggs
  • 1 tsp vanilla extract
  • 2 1/2 c all-purpose flour
  • 2 Tbsp cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves (or less, to taste)
  • 1/2 c buttermilk
  • 2 c peeled, shredded zucchini
  • 2 c semi-sweet chocolate chips

Directions

  1. Preheat oven to 350

  2. In large mixing bowl cream together the butter and sugar. Beat in the oil, eggs and vanilla

  3. Combine the dry ingredients in a separate bowl and add to the creamed mixture alternately with the buttermilk.

  4. Stir in the zucchini.

  5. Pour into a greased 9×13-inch pan.

  6. Sprinkle with the chocolate chips.

  7. Bake at 350F for 45-50 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.
