Honey Apple Glazed Carrots

Ingredients

  • 2 tablespoons butter
  • 20 baby carrots, peeled and tops trimmed
  • 1 1/3 cups unsweetened apple juice
  • 2 teaspoons honey
  • salt, to taste
  • pepper, to taste

Directions

  1. Melt butter in a nonstick skillet over medium-high heat.

  2. Add carrots to the skillet and saute until the carrots begin to brown slightly, about 8 minutes.

  3. Add apple juice and honey and bring to a boil.

  4. Reduce the heat and simmer until carrots are tender and liquid is reduced to glaze, stirring occasionally, about 15 minutes.

  5. Season to taste with salt and pepper.
