Mango & Black Bean Salsa

Ingredients

  • 1 1/2 c chopped peeled mango
  • 1 c sliced green onions
  • 1/2 c cooked wild or brown rice
  • 3 T finely chopped cilantro
  • 2 T roasted tomatillo or fresh salsa
  • 2 T fresh lime juice
  • 2 T olive oil (I do not use any)
  • 1/4 t salt
  • 1/4 pepper
  • 1 (15 oz) can black beans rinsed and drained

Directions

  1. Combine all ingredients in a large bowl and toss.
