Mexican Stir-Fry Squash over Rice

For a meat dish add 1 pound of cut up beef or chicken.

Prep time: 5 minutes
Cook time: 15 minutes
Serves 5 people

Ingredients

  • 3 tablespoons olive oil
  • 4 cut-up squash or zucchini
  • 1/2 cup diced onion
  • 1 clove garlic, mashed
  • 1 t. ground cumin
  • 1/2 t. ground black pepper
  • 1 cup of fresh or canned cut up tomatoes
  • 1 cup rice
  • 2 cups broth or water

Directions

  1. Prep rice by bringing water or broth to a soft boil; add the rice and cook for 15 minutes.

  2. 2 Cut squash into 1" squares.

  3. Mash the garlic and combine with cumin, black pepper, and tomatoes.

  4. Add olive oil to a 10" skillet and saute the onion until soft and then add the squash. Add the salt and pepper and stir-fry for about 5 minutes.

  5. (If using meat, brown the meat and add to the squash mixture.)

  6. 4 Add the tomato mixture and cook for about 10 or 15 minutes.

  7. Serve over rice.
