Tomato, Mozzarella, and Basil Bruschetta

Full of fresh summer flavors

Prep time: 15 minutes
Cook time: 10 minutes
Serves 5 people

Ingredients

  • 12 ounces mozzarella
  • 3 cups basil, loosely packed
  • 3 tablespoon walnuts or pine nuts
  • 1/2 cup olive oil
  • 3 cloves of garlic
  • 1/2 cup parmesan
  • salt to taste
  • 12 slices of french bread
  • 12 slices of tomatoes

Directions

  1. Prep the basil pesto by putting the basil, garlic, olive oil, walnuts, Parmesan cheese and salt to taste in a food processor and process until all is well combine and becomes a paste.

  2. Cover each slice of bread with the basil pesto and top with a slice of mozzarella. Put in the oven until the cheese melts.

  3. Take out of the oven and top each bread slice with a slice of fresh tomato.
