Stuffed Mushrooms

these are delicious! I was fooling around hungry craving stuffed mushrooms and just threw in everything I like (sorry I don’t measure much) and it came out mmm good! Great for an appetizer, this makes about 24-36 mushrooms depending on the size mushroom and how much you stuff into them… leftover mixture is also great toasted on about any type of bread

Ingredients

  • Large mushrooms
  • fresh spinach
  • chopped onion
  • bacon pieces
  • mild sausage
  • 1 block cream cheese
  • minced garlic
  • butter or olive oil
  • mozzarella/parmesian or white cheddar cheese

Directions

  1. cook sausage, drain and set aside

  2. remove stems from mushrooms (I chop the stems and add to the mixture or save for my creamed spinach— I don’t like to waste)

  3. saute minced garlic, chopped onion, and spinach in butter or olive oil (I’ve used both-just a preference thing..) until wilted, then add bacon and mushroom stem pieces. saute for another minute then add to sausage in a mixing bowl

  4. add cream cheese and mozzarella/parmesian or white cheddar to the mixing bowl

  5. make sure everything is mixed well, spoon mixture into mushroom caps

  6. Bake at 400 for about 25 min
