Hearty Lentil Stew

Ingredients

  • 1 pkg (16 oz) lentils
  • 19 cups water
  • 1 onion, chopped
  • 1/2 cup cooked rice
  • 2 tsp salt
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 3 large tomatoes, chopped
  • 1 large carrot, chopped
  • 1 pkg (10 oz) chopped frozen spinach, thawed, drained

Directions

    • Wash and drain lentils.
    • Combine lentils, water, onion, rice, salt, garlic, oregano and parsley in a large pot and bring to a boil.
    • Cover and simmer for 25 minutes.
  1. *Add tomatoes, carrot and spinach.

  2. *Simmer 20 minutes more or until lentils are tender.
