Carrot Ginger Soup

Ingredients

  • 5 cups broth, chicken or veggie
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onions, diced
  • 1/4 cup orange juice
  • 3-6 tbsp fresh ginger, sliced
  • 5 tsp unsalted butter

Directions

  1. Don’t worry about chopping anything finely, since it’s all blended in the end.

  2. Sauté onions in a wee bit of oil or butter, when softened add the other veggies and sauté for 5 min, make sure nothing burns. Then add the broth and ginger and simmer for 30 minutes or until the carrots are soft.

  3. Add orange juice and puree in batches in a blender.

  4. To serve, add the butter to the soup, and maybe some pepper, salt, or a dollop of yogurt.
