Chocolate fig brownie

Ingredients

  • spray oil for greasing
  • 50g gluten free cocoa powder or 1/2c
  • 100g reduced fat spread
  • 2 eggs
  • 1c caster sugar
  • 100g gluten free baking mix
  • 1/4c gluten free dark chocolate chips
  • 1/2c chopped figs or dates - finely chopped or pureed
  • 2t icing sugar sifted for dusting

Directions

  1. Preheat oven to 180C

  2. grease and line a slice pan

  3. melt low fat spread and cocoa in a pan

  4. stir in sugar

  5. beat in eggs, baking mix

  6. add choc chips and figs

  7. spoon into pan and level surface

  8. bake for 20 – 25 min until slightly raised and firm to touch

  9. Cool for 5 in before removing from pan

  10. Cut, sprinkle with icing sugar to serve
