Broccoli Soup

Ingredients

  • 1 large bunch broccoli
  • 1 onion, chopped
  • 4 large potatoes, diced, peeled
  • 1 clove garlic, minced
  • 4 cups stock or water
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • 1 pinch nutmeg
  • 4 cups milk or evaporated milk
  • salt and pepper

Directions

  1. Chop up broccoli, combine with onions, potatoes, garlic, stock, thyme, pepper, and nutmeg in a saucepan. Bring to a boil, the reduce heat and simmer until broccoli is tender.

  2. Puree soup with stick blender, then add milk and heat, do not allow to boil. Salt and pepper to taste.
