Apple and Shrimp Curry

Ingredients

  • 1/8 cup butter
  • 1 clove chopped garlic
  • 2 cups water
  • 1 large tomato, chopped
  • 1 large apple, peeled and chopped
  • 1/2 tsp powdered ginger
  • 1/2 tbsp sugar
  • 2 tbsp curry powder
  • 3/4 tsp salt
  • 1/8 tsp black pepper
  • 3/4 tbsp flour
  • 2 pounds shrimp, frozen

Directions

  1. Heat butter, add garlic, and cook until lightly browned.

  2. Add water; bring to a boil.

  3. Add tomato and apple.

  4. Blend sugar, curry powder, flour, salt, pepper and ginger.

  5. Add enough cold water to make a paste and gradually stir into boiling mixture.

  6. Add shrimp and cook 5 minutes more.

  7. Serve over rice.
