Koththu Barotta Sambar

  1. Fry and powder the following-pattai,kiraambu,sesame seeds,vendhayam(2),mustard,elaichi,soombu,jeera

  2. Fry in oil in the order garlic,onion,green chillie,ginger,curry leaves, i tomato(2), and grind to paste.
  3. Separately in oil fry the onions(long cut), jeera,tomato,curry leaves add the above paste and water.Boil to concentrate(sambar consistency).If necessary add boiled ko.kadalai for just sambar.

  4. For koththu barotta keep the sambar separately.Fry onion,curry leaves,veggies and the barotta pieces.Add the sambar in small qty and fry to crisps.Add the sambar little so that the barotta does not get soaked to become paste.
