Pasta with Arugula Pesto

Prep time: 10 minutes
Cook time: 15 minutes
Serves 5 people

Ingredients

  • 8 oz of pasta of your choice
  • 1/4 to 1/2 cup arugula pesto
  • Parmesan for topping
  • PESTO
  • 2 cups packed arugula
  • 1/2 cup extra-virgin olive oil
  • 1 cup finely grated Parmesan
  • 1/3 cup walnuts or pine nuts
  • 1 tbsp. lemon zest
  • 1 clove garlic, chopped
  • Kosher salt and freshly ground black pepper, to taste

Directions

  1. Cook the pasta in a pot of boiling water until done, 15 minutes or so. Drain the pasta and put back into pot; add the pesto and stir well. Serve with Parmesan cheese.

  2. Add as much pesto to your pasta as desired.

  3. Serve with hot sourdough bread and a salad.
