Whole Wheat Olive Oil Bread

Ingredients

  • 7 cups whole wheat flour
  • 2 packets (1.5 TBS) yeast
  • 1 TBS kosher salt
  • 1/4 cup vital wheat gluten
  • 3.5 cups lukewarm water
  • 1/2 cup olive oil

Directions

  1. Whisk together dry ingredients

  2. Add liquid and mix

  3. Cover (not airtight) and let rise for 2 hr

  4. Can refrigerate for 7 days at this point

  5. Preheat oven to 450 with stone in and empty metal tray on another rack

  6. Take grapefruit-size piece and shape into ball

  7. Let rise for 90 minutes (40 if fresh dough) covered in plastic wrap on cornmeal on pizza peal

  8. Dust loaf with flour and slash with 1/4 in deep parallel cuts with a bread knife

  9. Bake for 30 minutes, with 1 cup of hot tap water in tray
