Southwestern Black Bean Burgers

Ingredients

  • 1 can black beans, rinsed and drained
  • 2 tbsp. light mayo
  • 1/4 cup packed fresh cilantro leaves, chopped
  • 1 tbsp dried bread crumbs
  • 1/2 tsp ground cumin
  • 1/2 tsp hot pepper sauce
  • non-stick cooking spray

Directions

  1. In a large bowl, mash beans with mayo until almost smooth (some lumps should remain).

  2. Stir in cilantro, bread crumbs, cumin, and pepper sauce until combined.

  3. With lightly floured hands, shape bean mixture into four 3-inch patties.

  4. Spray both sides of each patty lightly with non-stick cooking spray.

  5. Heat skillet over medium heat until hot.

  6. Add patties and cook until lightly browned, about 3 minutes.

  7. Flip patties and cook for 3 minutes longer or until heated through.
