Thai Basil Soup

Ingredients

  • Box Chicken Broth
  • Can Coconut Milk
  • One cup thinly sliced basil or 1 1/2 tbs Curry
  • Green Onions or other onions
  • Dash Cayenne Pepper
  • Arugula or Spinach
  • A couple Tomatoes
  • Other veggies as available
  • Rice noodles or Ramen
  • A little salt and pepper

Directions

  1. Put all ingredients except the noodles and tomatoes into a soup pot

  2. Simmer for 30-40 min

  3. In the last 10 min add noodles and tomatoes
