  • Large Tortillas
  • Can Rotel
  • Cheddar and Mozzerella Cheese
  • Chicken cubed
  • Mild Enchilada Sauce
  • Frozen Corn
  • Black Beans


  1. Cube and saute chicken until cooked through

  2. On each tortilla put some chicken, cheese, Rotel, sauce, corn and beans

  3. Roll each tortilla and place in baking dish side by side

  4. Cover top of enchiladas with extra sauce and cheese and anything left over

  5. Bake at 350 around 45 minutes
