Ground Nut Soup

Ingredients

  • Olive Oil
  • 3-4 Chicken Breasts
  • Curry powder or paste
  • Can of garlic and onion diced tomatoes
  • Ground Cayenne Pepper
  • Green Pepper
  • 1/2 Large White Onion
  • Mince Garlic
  • One can Chicken Broth
  • Honey
  • Ginger
  • 2 cups Dry Roasted Peanuts
  • Butter
  • Rice
  • Salt
  • One bag frozen Sugar Snap Peas

Directions

  1. Put Brown Rice on to cook with water and butter or oil

  2. In a small pan put 2 tbls of Olive Oil and Onion to saute, stirring constantly

  3. Cube Chicken and put in wok with chopped Green Pepper with Olive Oil, 2 tsp of garlic and half the can of tomatoes, heat through

  4. In a blender put can of chicken broth, peanuts, other half of tomatoes, blend

  5. Add a tsp of Curry and 3/4 tsp of Ginger and cayenne pepper to taste

  6. Add honey to outside of onions to carmelize

  7. Once carmelized, add onions to blender and blend everything again

  8. Add blender contents to wok, where chicken should be almost cooked through

  9. Simmer for 30-40 min to let contents cook and set flavor

  10. Add Sugar Snap Peas in the last 5 min and salt to taste
