Chana Saag

Indian creamed spinach

Ingredients

  • 2 Tbsp olive oil
  • 1 medium onion
  • 2 cloves garlic
  • 2 inches fresh ginger
  • 1 Tbsp curry powder (hot or mild)
  • 1 tsp cumin
  • 3/4 tsp salt
  • 1 large tomato
  • 1 lb. frozen chopped spinach
  • 1 can chickpeas
  • 1 tbsp honey
  • 1/2 cup water
  • 1 cup whipping cream

Directions

  1. Saute onion and garlic on medium heat with olive oil

  2. Add ginger and curry powder and cumin

  3. Add tomato and salt

  4. Add honey

  5. Drain and rinse chickpeas and put into blender with water

  6. Blend those ingredients

  7. Take the pan off heat to let cool and then add small amounts of onion mixture to the blender

  8. Put all of blender contents back into the pan

  9. Add spinach and heat through

  10. Turn off heat and stir in cream until warm throughout

  11. Serve with rice or Naan
