Chicken & Rice Foil Pack

Great make ahead for camping. Get the kiddos involved!
Makes 2 packs.

Ingredients

  • 1 1/3 cups instant "Minute Rice"
  • 1 can cream of mushroom soup
  • 1/2 can water
  • 2 small chicken breast halves (too thick or big and it won't cook thru)
  • 1/2 cup frozen mixed vegetables

Directions

  1. THE ABOVE INGREDIENTS MAKE 2 FOIL PACKS.

  2. Mix uncooked rice, water and mushroom soup together.

  3. You can par-cook the frozen mixed vegetables slightly in the microwave if you like your veggies really done or run under some really hot water. Mix in with the mushroom soup and rice.

  4. Divide rice-veggie-soup-water mixture into two foil pack pouches.

  5. TIP: Even if you use heavy duty foil you should double your foil to be safe. If you don’t know how to make a foil pack there might be some video on the internet to show you how. Be sure to leave air space for steam to build up. You can also dissolve a chicken bouillon cube and put a couple tablespoons liquid bouillon into each foil pack. Remember, don’t squeeze out air. Each person can write their name on the foil pack with a sharpie marker…foil must be dry for the sharpie to work.

  6. Wash and cut up each side of the chicken breast. Cut chicken into smaller chunks. Divide chicken between the two foil pouches.

  7. Seal, being sure to leave plenty of air space for the steam and rice to expand. Each kiddo can write their name on a clean dry place on the foil with a sharpie pen so they will know which one they made.

  8. Freeze.

  9. Thaw before burying in white hot coals or it will burn on the outer edges and be raw in the center.

  10. Cook over coals for 30-40 minutes, turning every 10 minutes. Allow to set for a few minutes after removing from heat. Make sure chicken is done.
