Cinnamon Roasted Sweet Potatoes

Ingredients

  • 1 large sweet potato
  • 1 1/2 tsp extra-virgin olive oil
  • 1 1/2 tsp cinnamon
  • Sprinkle of sea salt

Directions

  1. Preheat oven to 400

  2. Line a baking pan/sheet with tin foil and spray the sheet

  3. Cut up sweet potatoes into your desired size (fries, cubes for home fries, etc.)

  4. Drizzle with extra-virgin olive oil or coconut oil and toss so all sweet potatoes are coated

  5. Sprinkle with sea salt and cinnamon, toss again so all are coated

  6. Bake for about 25 minutes or until fully cooked
