Never Fail Frosting (A 7-Minute Frosting)

This is a different version of my other seven minute frosting.

Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 teaspoon cream of tartar
  • 5 tablespoons cold water
  • 1 1/2 teaspoons light corn syrup
  • 2 egg whites (unbeaten)
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla

Directions

  1. Place all ingredients except vanilla over boiling water of a double boiler.

  2. Beat with electric mixer on medium speed until blended.

  3. Then cook, beating constantly on high speed until mixture stands in peaks.

  4. Remove from heat.

  5. Add 1 teaspoon vanilla.

  6. Continue beating until spreading consistency.

  7. Spread on cake layers.
