Microwave Divinity

  • 3 cups sugar
  • 1/2 cup light corn syrup
  • 2/3 cup water
  • 1/4 teaspoon salt
  • 1 egg white
  • 1/4 teaspoon vanilla
  • 1 cup chopped pecans


  1. In a 3 quart glass bowl, cook sugar, syrup and water on full power 12 to 18 minutes until mixture spins a fine thread.

  2. In another bowl, add salt to egg white, beating constantly until whites are stiff and form peaks.

  3. Slowly pour a thin stream of syrup mixture into egg whites beating constantly until mixture loses shine and thickens.

  4. Stir in vanilla and pecans.

  5. Immediately drop by teaspoonful on to buttered wax paper.
