Pralines

Ingredients

  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1/8 teaspoon salt
  • 2 tablespoons butter
  • 1 1/2 cups pecan halves

Directions

  1. In large heavy sauce pan combine sugar, baking soda, buttermilk, vanilla and salt. Cook over high heat for 5 minutes or to 210 degrees. Stirring frequently scraping bottom of pan add butter and pecans.

  2. Continue cooking scraping constantly bottom and sides or pan until reaches soft ball stage 234 degrees.

  3. Remove from heat, cool slightly, beat until thick and creamy.

  4. Drop from tablespoon onto buttered wax paper and let cool.
