Albert’s Hot Sauce

Don’t know who Albert is…but he makes a pretty good sauce!
Makes 10 pints so you can give some away as gifts.

Ingredients

  • 1 6 pound 4 ounce can crushed tomatoes (Angela Mia)
  • Jalapeno peppers to taste (see guide below)
  • 3 onions finely chopped
  • 1 cup vegetable oil
  • 1/2 cup vinegar
  • 7 teaspoons salt
  • 6 cloves garlic finely chopped
  • 3 tomatoes finely chopped

Directions

  1. Start with the tomatoes in a large container and add the remaining ingredients.

  2. Add the jalapeno peppers last so you can judge the “hotness” as you taste it.

  3. Individual preference will dictate how much salt and garlic to add.

  4. This recipe makes about 10 pints of hot sauce.

  5. Spoon into jars and refrigerate for best results. I suppose you could process in a hot water bath caner…just follow the canning guide for tomatoes.

  6. JALAPENO PEPPER CHART: 8 = mild; 10-12 = medium; 14=16 = HOT!
